Wise Cream -- our low-carb version of ice cream
Our frozen desserts are very easy to make. They don't even use an ice cream machine. Wise Cream -- legally, it is not ice cream because it isn't freeze-churned -- makes a rich delicious old-fashioned 'homemade' ice cream. You get your choice of flavors, sweeteners, and even fat levels.
Our fat-free version is so good that we recommend it to everyone, not just low-fat dieters, as long as a tiny amount of fat is added, either from chopped nuts or by drizzling liquid cream (or even whole milk) over the top at serving time. The reason is that a tiny amount of fat makes a huge difference in the way we taste flavors.
Ingredients
Fat-free Wise Cream:
- 1 cup less one tablespoon lukewarm water
- 1 package Wise Choice Frozen Dessert Mix
- Sweetener equivalent to 5 teaspoons sugar
- 1/2 - 1 teaspoon flavored extract of your choice

1 teaspoon heavy whipping cream per serving (optional)
Directions
Makes 8 1/2-cup servings.
Make sure that anything that touches the unwhipped mixture, including measuring spoons and cups, is grease-free.
1. Place water in a one-quart glass or metal mixing bowl. Add Wise Choice Frozen Dessert Mix and sweetener. With an electric mixer on LOW, mix until powder is dissolved. Scrape down sides of bowl.
2. Turn electric mixer to HIGH and whip for 2-4 minutes or until foam forms peaks.
3. Continue to mix for 1 more minute until dessert is firm. Add extract or flavorings and mix until combined.
4. Premium and Super-premium Wise Cream only: In a separate bowl whip cream until doubled in size. Gently fold into frozen dessert mixture.
5. Freeze until firm, and store, covered, in freezer.
Fat-free Wise Cream only: at serving time drizzle a teaspoon of liquid cream over the dish.
Premium Wise Cream:
Prepare Wise Choice Frozen Dessert Mix according to the instructions above but reduce water to 3/4 cup and use 1/2 cup heavy whipping cream in step 4 above.
Super-Premium Wise Cream:
Prepare according to the instructions above but reduce water to 1/2 cup plus 1 tablespoon and increase heavy whipping cream to 1 cup in step 4 above.
Options: replace the flavoring/extract below with 1-2 Tablespoons liqueur, and/or replace
the water below with coffee or even herb tea. You can also
add 2-3 teaspoons of unsweetened cocoa powder (plus a pinch of salt), but use fat-free cocoa or
add the cocoa last, mixing only enough to incorporate it, as its fat could flatten the foam.
