Sugar-free Gluten-free Low-carb Almond-Flour Butter Cookies
Ingredients
- 1 cup ExpertExtras RealCream dry dairy cream
- 2 tablespoons ThickenThin not/Sugar thickener
- 1 cup almond flour
- Sweetener equivalent to 1/3 cup sugar
- 1 teaspoon baking powder
- 1 large egg
- 1 large egg yolk
- 2 tablespoons water
- 1/2 teaspoon vanilla extract

Directions
Makes 3 dozen cookies.
Preheat oven to 325° F. Line a cookie sheet with parchment paper or coat with non-stick spray.
1. In a medium mixing bowl combine RealCream, not/Sugar, almond flour, sweetener and baking powder.
2. Beat the egg and the egg yolk together. Add the water and the extracts. Stir into the dry ingredients to form a soft dough.
3. Chill for 15 minutes to make handling easier. Either shape into teaspoon-sized balls or flatten with wet fingers.
4. Bake until cookies turn brown around the edges - 15 minutes. Cool on rack and store covered.
