Green Beans with Almonds

An easy dish with an interesting twist.

 

Ingredients

  • 1 pound green beans

  • 1/4 cup water
  • 2 teaspoons light soy sauce
  • Zest of 1 lime
  • 2 tablespoons lime juice
  • 2 tablespoons finely grated ginger
  • 2 cloves garlic, minced
  • Sweetener equivalent to 1 tablespoon sugar
  • 1/2 teaspoon ThickenThin not/Sugar thickener

  • 1/3 cup slivered almonds, toasted

     

Directions

Makes 4 servings.

1. Trim beans and cook in boiling salted water until just tender. Drain.

2. Meanwhile, combine water, soy, lime zest and juice, ginger, garlic, sweetener and ThickenThin not/Sugar thickener in a sauté pan large enough to hold the beans.

3. Bring to a boil over medium heat, stirring until thick. Add drained beans and toss to coat.

4. Serve sprinkled with toasted almonds.
