Arugula Salad with Low-Carb Sweet and Sour Dressing

This is a sophisticated but easy salad.

 

Ingredients

Salad

  • 3 cups baby arugula
  • 1/4 cup toasted pine nuts
  • 1/3 cup shaved Parmesan cheese

     

Dressing

  • 1/4 cup vegetable or olive oil
  • 1/4 cup water
  • 1/3 cup red wine vinegar
  • 1/2 teaspoon ThickenThin not/Starch thickener
  • Sweetener equivalent to 2 tablespoons sugar or to taste
  • 1/4 cup water
  • Salt and freshly ground black pepper to taste
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 clove garlic

     

Directions

Salad serves 2. Dressing Makes 1 cup.

Salad

1. Make sure arugula is clean. Just before serving arrange arugula on plates mounding it as high as possible.

2. Gently sprinkle with pine nuts and Parmesan.

3. Drizzle with dressing to coat lightly. Serve immediately /p>

Dressing

1. Combine all ingredients in blender container. Process until smooth - some flecks of basil will remain.

2. Store in refrigerator until needed.
