Lowcarb Gluten-free Banana Bread
Ingredients
- 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
- 2 cups ground pecans
- pinch salt
- 1 teaspoon cinnamon, or to taste
- Sweetener equivalent to 1/2 cup sugar
- 1 cup water
- 2 large eggs, beaten
- 3 tablespoons vegetable oil
- 1 small banana, thinly sliced

1/4 cup walnut pieces
Directions
Makes 1 8x4x2 1/2-inch loaf.
Preheat oven to 350° F. Coat loaf pan with non-stick spray.
1. In a medium mixing bowl combine Wise Choice Cake-ability Baking Aid, ground pecans, sweetener, salt and cinnamon.
3. Add water, eggs and oil, stirring to mix well.
4. Gently fold in part of the sliced banana, and the walnuts.
5. Turn into prepared loaf pan. Use the remaining slices to top loaf. Bake until a tester comes out clean - 25-30 minutes.
6. Cool in pan 5 minutes. Unmold onto rack to finish cooling.
