Lowcarb Gluten-free Brownies

A great way to satisfy a chocolate craving.

 

Ingredients

  • 1/2 cup unsalted butter
  • 4 tablespoons unsweetened cocoa powder
  • 3 large eggs
  • 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
  • Sweetener equivalent to 1 cup sugar
  • pinch salt
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 3/4 cup chopped nuts, optional

     

Directions

Makes 16 2-inch brownies.

Preheat oven to 350° F. Coat an 8-inch square baking pan with non-stick spray.

1. In a medium bowl set over a pan of simmering water combine butter and cocoa powder. When butter is melted, remove from heat and let cool.

2. Whisk in eggs, Wise Choice Cake-ability Baking Aid, sweetener, salt water and vanilla.

3. Fold in chopped nuts if using.

4. Turn into prepared pan and bake for about 20 minutes or until a tester comes out clean.

5. Cool on rack, then cut into 2-inch squares.
