Sugar-free Gluten-free Butter Cookies
Ingredients
- 1 cup ExpertExtras RealCream dry dairy cream
- 1 large egg yolk
- 1 large egg
- Sweetener equivalent to 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- pinch mace, optional

2 tablespoons ThickenThin not/Sugar thickener
Directions
Makes 24 cookies.
Preheat oven to 325° F. Line a cookie sheet with parchment paper or coat with non-stick spray.
1. Add the eggs to the cream powders, mixing to break up any lumps. Add the sweetener, baking powder and seasonings.
2. Mix in the ThickenThin not/Sugar thickener and quickly drop cookies by teaspoonfuls onto cookie sheet.
3. Bake for 15-20 minutes until cookies turn brown around the edges. Cool on a rack and store covered.
If the cookies aren't sweet enough for your taste, dust with a packet of sweetener.
