Sugar-free Gluten-free Ricotta-filled Crepes
These crepes are tender, thin pancakes, made without any starch and served with a delicious ricotta filling.
Ingredients
Ricotta Filling
- 1 3/4 cups ricotta cheese
- 1 large egg, beaten
- Sweetener equivalent to 2 teaspoons sugar
- 1/2 teaspoon ground cinnamon
- pinch salt
Crepes
- 1 cup ExpertExtras RealCream dry dairy cream, packed
- 4 teaspoons ThickenThin not/Starch thickener
- Sweetener equivalent to 2 teaspoons sugar
- 1/2 teaspoon salt
- 2 large eggs, beaten
- 4 egg whites

1/2 cup water
Directions
Makes approx 12 crepes with filling.
1. Make the ricotta filling by combining all ingredients, leaving the mixture a little lumpy.
2. Place dry ingredients in a mixing bowl. Add eggs and water and combine ingredients into thin batter. It tends to thicken a bit on standing, so have extra water available.
3. Heat a small frying pan, and butter evenly.
4. Pour a small amount of batter into pan, swirl to form even thin pancakes or crepes. (If you have trouble getting them thin enough, add a bit more water.) When center of crepe appears set and edges are slightly brown, turn over. If it starts to tear, let it cook a few seconds longer. Cook on other side just to brown slightly.
5. Stack crepes between sheets of waxed paper.
6. Take a crepe, and spread ricotta filling over it. Gently roll the crepe around the filling and saute gently to heat through.
Serve immediately.
