Low-carb Cheesy Grits Casserole
Grits has a rare affinity for cheese. Southern tradition calls for cheddar cheese, but it is great with Parmesan cheese as well. Makes a delicious brunch or side dish.
Ingredients
- 1 cup water
- 2 tablespoons ExpertExtras Grits Mix extender
- 1 tablespoon corn grits, quick-cooking
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter
- Salt and pepper, to taste

Pinch cayenne pepper, optional
Directions
Serves 2.
Preheat the oven to 350°F, and prepare a casserole dish.
1. In a 1-quart saucepan combine water, ExpertExtras Grits Mix Extender, grits and salt. Bring to a boil over medium-high heat, stirring constantly.
2. Remove from heat when grits cooked to your taste. Transfer to casserole.
3. Stir in the egg. Stir in the cheese, setting aside just enough to top the casserole, and add the butter and seasonings.
4. Bake at 350°F for 15 minutes, or until near set. Top with cheese and cook until browned and set.
