Cooked Chocolate Maple Pudding
A traditional cooked pudding recipe that is dense, smooth and chocolate, with an unusual flavor twist.
Ingredients
- 1 tablespoon Wise Choice Pudding Mix
- 2 tablespoons cocoa powder
- Pinch salt
- 1 teaspoon instant coffee powder
- 3/4 cup cold water
- 1/4 cup heavy cream
- 3 tablespoons sugar-free maple syrup
- 1 teaspoon chocolate extract, optional

1 tablespoon unsalted butter, softened
Directions
Makes 2 3/4 cup servings.
1. Sift pudding mix and cocoa into a two-quart saucepan Add salt and coffee powder.
2. Add water gradually, whisking until smooth. Place over medium heat, stirring constantly until mixture begins to thicken. Stir in cream and continue to cook for another minute. Off the hea, add syrup and chocolate extract. Add butter and stir until butter is incorporated.
3. Pour into two 6-ounce ramekins or similar containers. Cover with plastic film, to stop skin forming. Chill and serve, topped with whipped cream or chocolate sprinkles if desired.
