Lowcarb Gluten-free Chocolate Pecan Cake

Moist, delicious, and perfect with our Buttercream-like Frosting on top or as a filling.

 

Ingredients

  • 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
  • 2 cups ground pecans
  • 1/2 cup unsweetened cocoa powder
  • pinch salt
  • Sweetener equivalent to 3/4 cup sugar
  • 1 1/8 cups water
  • 3 large eggs, beaten
  • 7 tablespoons oil
  • 2 teaspoons vanilla extract

     

Directions

Makes 16 servings.

Preheat oven to 350° F. Grease an 8-9 inch cake pan.

1. Place a bowl of water on the bottom shelf of the oven. This helps to keep the cake moist.

2. In a medium mixing bowl combine Wise Choice Cake-ability Baking Aid, ground pecans, cocoa, sweetener, and salt.

3. Add water, eggs, oil and vanilla extract, stirring to mix well.

4. Turn into prepared cake pan and bake until a tester comes out clean - 25-30 minutes.

6. Cool in pan 5 minutes. Unmold onto rack to finish cooling.
