Easy Low-carb Grain-free Egg Croquettes
An easy way to turn leftover egg salad into a delicious hot breakfast or lunch. And elegant too -- at one time croquettes were served at the fanciest ladies' luncheons.
What's the difference between a croquette and a pancake? Aside from the conical shape often used, croquettes are made from cooked ingredients, while similar dishes made from raw ingredients would be called pancakes, or burgers when made from raw meat or fish. For example, potato croquettes are made from cooked potatoes, but potato pancakes are made from raw potatoes. Similarly, salmon croquettes start with cooked salmon, while salmon burgers are made from raw salmon.
Ingredients
- 1 cup egg salad
- 1 tablespoon ThickenThin not/Cereal thickener

butter or oil for frying
Directions
Serves 2.
1. Work the ThickenThin not/Cereal thickener into the salad using enough to make it hold together.
2. Form into slightly-flattened balls or patties and dust lightly with more thickener.
3. Fry until heated through and brown in as little or as much butter or oil as you please.
