Low-carb Chinese Egg Flower Soup

Egg flower, also known as egg drop, soup is one of the classic soups of Chinese cuisine. It is also an extremely easy soup to make lowcarb, if you make it at home.

 

Ingredients

  • 5 cups chicken broth
  • 1 teaspoon ThickenThin not/Starch thickener
  • 1 teaspoon sherry
  • 2 large eggs, beaten
  • Choppped scallion for topping

     

Directions

Serves 4.

1. In a three-quart saucepan combine chicken broth, ThickenThin notStarch thickener and sherry. Bring to a boil.

2. Remove soup from heat and gently stir in beaten so that it forms flower-like bits.

3. Place in serving bowl. Sprinkle chopped scallion on top and serve immediately.
