Lowcarb Eggnog

This version is wonderful, and also extremely easy.

 

Ingredients

  • 1/3 cup heavy cream
  • 1/2 cup Egg BeatersĀ® 99% egg substitute
  • 2 tablespoons ThickenThin not/Sugar thickener
  • 1/2 teaspoon vanilla extract
  • Sweetener equivalent to 7 teaspoons sugar
  • nutmeg, to taste
  • 1 teaspoon rum extract, or rum to taste, optional

     

Directions

Makes 2 servings.

1. Whip cream until foamy.

2. Add remaining ingredients and whip until well mixed.

3. Mix in choice of liquor to taste or use rum extract. Refrigerate until serving time.

Serve with nutmeg sprinkled on top.

It's also delicious with non-dairy heavy cream substitutes.
