Caroline's "Forgotten" Cookies

This lowcarb version of a delightful Christmas (and any other occasion) cookie was developed by one of our customers, Caroline Ghanbari.

 

Ingredients

  • 7 1/2 tablespoons water
  • 4 tablespoons Wise Choice Mousse Mix
  • Sweetener equivalent to 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 4 teaspoons mini chocolate chips
  • 1/4 cup chopped pecans

     

Directions

Makes 24 cookies.

Preheat oven to 350° F. Line a cookie sheet with parchment paper.

1. After making sure your mixer, beater and bowl are all grease-free, place the water in a one-quart glass or metal mixing bowl and add Wise Choice Mousse Mix and sweetener. Using an electric mixer on LOW, mix until powder is dissolved. Scrape down sides of bowl then whip on HIGH until foam fills the bowl at least halfway and stands in peaks (2 to 4 minutes). Whip for an extra minute. Add vanilla and continue to whip until you can hold the bowl upside down without the foam moving.

2. Carefully fold in chocolate chips and nuts. Spoon out rounded tablespoons of batter onto cookie sheet. Place in preheated oven for 2 minutes, then turn the oven off and leave in the oven overnight without opening the door (no peeking!). Peel cooled cookies carefully off parchment paper and store in airtight container.
