Low-carb Gluten-free French Toast
This delicious and satisfying low-carb dish looks and tastes like French toast.
For the most bread-like texture and best flavor, use the firmest tofu you can find, and squeeze out as much liquid as you can.
Ingredients
- 1/4 cup finely ground almonds (or other nut)
- 1 tablespoon ThickenThin not/Cereal thickener
- salt, to taste
- cinnamon, to taste
- 1 large egg, beaten
- 1 tablespoon heavy cream
- sweetener equivalent to 1 1/2 teaspoons sugar
- salt, to taste
- cinnamon, to taste
- 1/2 pound extra-firm cotton (not silken) tofu, sliced
- butter or oil for frying
Directions
Serves 2.
1. In a shallow bowl, combine nuts and ThickenThin not/Cereal thickener and season to taste.
2. In another shallow bowl, combine egg, cream, sweetener, vanilla, and seasonings.
3. Dip tofu slices in the ThickenThin not/Cereal thickener, and then in the egg mixture.
4. Preheat frying pan, add butter or oil, arrange tofu slices in it, pouring any remaining egg mixture over them. Fry until brown. (Avoid turning until egg coating is fully set.)
