Lowcarb Gluten-free Gingerbread Loaf
A spicy gingerbread that's especially good on cold, dark evenings. (Preferably eaten in front of a roaring log fire.... )
Ingredients
- 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
- 2 cups ground pecans
- pinch salt
- Sweetener equivalent to 3/4 cup sugar
- 1 tablespoon powdered ginger
- 1 teaspoon powdered cinnamon
- 1 teaspoon baking powder
- 3 large eggs, beaten
- 1/4 cup vegetable oil

1 cup low-fat cottage cheese
Directions
Makes 1 9x3x5-inch loaf.
Preheat oven to 350° F. Coat loaf pan with non-stick spray.
1. In a medium mixing bowl combine Wise Choice Cake-ability Baking Aid, ground pecans, sweetener, salt, ginger, cinnamon and baking powder in a medium mixing bowl.
2. Stir in eggs, oil, and cottage cheese just until combined.
3. Pour mixture into prepared pan and bake until a skewer comes out clean - about 30 minutes. Cool in pan 5 minutes, then finish cooling on rack.
