Low-carb "Honeycake"
Our version of the traditional Jewish holiday cake. Tastes like the real thing without a speck of honey.
Ingredients
- 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
- 2 cups ground pecans
- Sweetener equivalent to 1/2 cup sugar
- 1 1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves, ground
- pinch salt, optional
- 1 cup coffee
- 3 large eggs, beaten

3 tablespoons vegetable oil
Directions
Makes 16 servings.
Preheat oven to 350° F. Line a loaf pan with parchment or foil.
1. In a medium mixing bowl combine Wise Choice Cake-ability Baking Aid, pecans, sweetener, spices and salt. Stir to break up all lumps.
2. In a separate bowl combine coffee, beaten eggs, and oil.
3. Mix liquid and dry ingredients together until thoroughly wet..
4. Immediately pour into prepared pan and bake for 25-35 minutes until center springs back.
5. Cool in pan 5 minutes. Unmold onto rack to finish cooling.
