Lowcarb Oatmeal

An wonderfully creamy, satisfying --and low-carb -- hot breakfast.

 

Ingredients

  • 3/4 cup water
  • 1 Tbs ThickenThin not/Cereal thickener
  • 1 Tbs quick-cooking oatmeal
  • Pinch salt

     

Directions

Makes one half-cup serving.

Stove-top version:

1. In a 1-quart saucepan combine water, ThickenThin not/Cereal thickener, oatmeal and salt. Bring to a boil over medium-high heat, stirring constantly.

2. Remove from heat when mixture thickens and oatmeal is tender.

Microwave version:

1. Coat a 1-pint container with non-stick spray.

2. Add water, reducing amount to 1/2 cup. Whisk in ThickenThin not/Cereal thickener, oatmeal and salt.

3. Microwave for 1 minute (depending on the type of oven settings), remove and whisk to break up large lumps.

4. Repeat step 3 until oatmeal reaches desired thickness.

Serving suggestions: Add sugar equivalent and heavy cream to taste; drizzle with low-carb syrup and/or sprinkle with toasted nuts.
