Raspberry Mousse Pie -- sugar-free, low-carb, and surprisingly low in calories
This pie is a great way to combine the luxury of a creamy mousse topping with a light, lower-fat dessert. Just the thing to finish off a big dinner! Best of all, it can be made days ahead and stored in your freezer.
Ingredients
Pie "crust"- Approximately 1/4 ounce unsweetened chocolate, grated
- 1 cup minus 1 tablespoon lukewarm water
- 1 package Wise Choice Frozen Dessert Mix
- 1/2 teaspoon vanilla extract
- Sweetener equivalent to 6 teaspoons sugar
- 2 tablespoons frozen raspberries
- 1 cup whipping cream
- Sweetener equivalent to 1 tablespoon sugar, or to taste
- 2 tablespoon unsweetened cocoa powder
- Pinch salt

Directions
Makes 10 servings. Prepare pie pan with cooking spray. Sprinkle over enough unsweetened chocolate to cover the bottom. Bottom layer Make sure that anything that touches the unwhipped mixture, including measuring spoons and cups, is grease-free. 1. Place water in a one-quart glass or metal mixing bowl. Add Wise Choice Frozen Dessert Mix and sweetener. With an electric mixer on LOW, mix until powder is dissolved. Scrape down sides of bowl. 2. Turn electric mixer to HIGH and whip for 2-4 minutes or until foam forms peaks. 3. Add vanilla extract and raspberries and stir to combine. Spoon into the pie pan and freeze until firm. Top layer 1. Pour cream into medium bowl. Add sweetener, cocoa and salt. Whip to soft peak stage with mixer on medium-high setting. 2. Turn setting to low and add Wise Choice Mousse Mix. The mixture will thicken almost immediately. 3. Pipe or swirl the mousse over the frozen pie. Freeze uncovered. Cover with plastic wrap after top is frozen. To serve: allow to sit at room temperature for a few minutes, until a knife easily penetrates the mousse layer. Cut into individual serving wedges. Serve before the lower layer melts. To store: cut into servings, cover, and keep in freezer, covered with plastic wrap. Allow it to soften slightly before serving.
