not/Grits -- our grain-free alternative

If you love grits, but can't have corn, this version comes close in texture. While it does not have the flavor of the real thing, it fills the gap when flavored with cheese and seasonings.

If you can have a small amount of corn, try our ExpertExtras Grits Mix for a low-carb version of grits with both satisfying texture and flavor.

 

Ingredients

  • 3/4 cup water
  • 1 1/2 Tbs ThickenThin not/Cereal thickener

     

Directions

Makes one half-cup serving.

Stove-top version: 1. In a 1-quart saucepan combine water, and ThickenThin not/Cereal thickener. Cook without stirring just until a big soft lump starts to form on top.

2. Whisk lump to break it down into grits-sized particles.

3. Continue cooking and whisking until mixture thickens.

Microwave version:

1. Coat a 1-pint container with non-stick spray.

2. Add water(reduce amount to 1/2 cup). Whisk in ThickenThin not/Cereal thickener.

3. Microwave for approximately 1 minute (depending on the type of oven settings), without stirring until a big soft lump starts to form on top.

4. Whisk lump to break it down into grits-sized particles. Continue cooking and whisking until cereal reaches desired thickness.

Serving suggestions: Add butter, cream, and/or cheese for flavor, and salt to taste.
