Grain- and Gluten-free Low-carb Oatmeal
Ingredients
- 3/4 cup water
- 1 1/2 Tbs ThickenThin not/Cereal thickener
- Maple flavoring, cinnamon or molasses, to taste

Directions
Makes one half-cup serving.
Stove-top version: 1. In a 1-quart saucepan combine water, and ThickenThin not/Cereal thickener. Cook without stirring to form large, firm lump of egg.
2. Whisk to large particle size.
3. Continue cooking until mixture thickens.
4. Remove from heat and flavor to taste.
Microwave version:
1. Coat a 1-pint container with non-stick spray.
2. Add water(reduce amount to 1/2 cup). Whisk in ThickenThin not/Cereal thickener.
3. Microwave for 1 minute (depending on the type of oven settings), remove and whisk to break up large lumps.
4. Repeat step 3 until cereal reaches desired thickness.
Serving suggestions: Add sugar equivalent and heavy cream to taste; drizzle with low-carb syrup and/or sprinkle with toasted nuts.
