Laura's Lowcarb Grain- and Gluten-free "not/Tapioca" Pudding
This recipe was created by created by Laura Richman. She says this recipe is "awesome warm. I don't know how it is cold - I haven't been able to wait long enough yet!"
Ingredients
- 3/4 cup water
- 1 tablespoon ThickenThin not/Cereal thickener
- 1/4 teaspoon vanilla extract
- 1 tablespoon cream
- sweetener equivalent to 2 teaspoons sugar
- dash cinnamon

tiny dash nutmeg
Directions
Makes one half-cup serving.
1. In a 1-quart saucepan combine water, and ThickenThin not/Cereal thickener. Cook without stirring to form large, firm lump of egg.
2. Whisk to large particle size.
3. Continue cooking until mixture thickens.
4. 4. Remove from heat, let cool for half a minute and gently whisk in the vanilla, cream, cinnamon, nutmeg and sweetener.
5. Let cool. If too thick, stir in little water or cream.
To store: Put into clean bowl, cover and refrigerate.
