Pecan-Crusted Salmon

This recipe is especially delicious and quite easy to make.

Ingredients

  • 1/3 cup pecans, ground
  • 2 teaspoons ThickenThin not/Cereal thickener
  • 1 clove garlic, chopped
  • pinch salt
  • pinch cayenne
  • 2/3 pound salmon fillets
  • 1 1/3 tablespoons extra virgin olive oil
  • 2 teaspoons butter

     

Directions

Serves 2.

Preheat oven to 500°F. Cover baking pan with foil.

1. Combine pecans, not/Cereal thickener, garlic, salt and cayenne.

2. Dip salmon fillets into olive oil and then pecan mixture and place in a single layer on the baking pan.

3. Bake approximately 10 minutes until fish flakes. Top fillets with butter before serving.
