Pecan-Crusted Salmon
This recipe is especially delicious and quite easy to make.

Ingredients
- 1/3 cup pecans, ground
- 2 teaspoons ThickenThin not/Cereal thickener
- 1 clove garlic, chopped
- pinch salt
- pinch cayenne
- 2/3 pound salmon fillets
- 1 1/3 tablespoons extra virgin olive oil

2 teaspoons butter
Directions
Serves 2.
Preheat oven to 500°F. Cover baking pan with foil.
1. Combine pecans, not/Cereal thickener, garlic, salt and cayenne.
2. Dip salmon fillets into olive oil and then pecan mixture and place in a single layer on the baking pan.
3. Bake approximately 10 minutes until fish flakes. Top fillets with butter before serving.
