Low-carb Gluten-free Pistachio Cake

Makes an interesting cake with a slight flavor of the Orient.

 

Ingredients

  • 1 single-cake package or 1/2 cup Wise Choice Cake-ability Baking Aid
  • 2 cups ground pistachios
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Sweetener equivalent to 3/4 cup sugar
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 3/4 cup whole milk plain yogurt
  • 1 tablespoon orange blossom water >

     

Directions

Serves 8.

Preheat oven to 350° F. Spray an 8x8x2-inch baking pan with non-stick coating.

1. In a medium mixing bowl combine Wise Choice Cake-ability Baking Aid, pistachios, baking powder, salt and sweetener. Whisk to take out any lumps.

2. In another bowl whisk together eggs, oil, water, yogurt and orange blossom water.

3. Mix liquids into nut mixture until just combined. Turn into prepared cake pan and bake for about 30 minutes or until a tester comes out clean.

4. Leave cake in pan to cool for 5 minutes. Remove and finish cooling on rack.
