Lowcarb Raspberry Jam
Raspberries have a wonderful flavor and color and are also low in carbs. One way to take advantage of the fruit's intense flavor for more than a day after picking is to make jam.
Ingredients
- 1/4 cup water
- 1 teaspoon lemon juice
- pinch salt
- Sweetener equivalent to 2 tablespoons sugar
- 3 1/2 tablespoons ThickenThin not/Sugar thickener

1 cup fresh or frozen raspberries
Directions
Makes approximately 3/4 cup.
1. Combine water, lemon juice, salt, sweetener and ThickenThin not/Sugar thickener in a 1-quart saucepan. Stir to combine then bring to a boil over medium heat.
2. Add raspberries and crush to desired consistency, cooking for two minutes.
3. Remove from heat. Cool and store in refrigerator.
