Lowcarb Gluten-free, Grain-free Lowcarb 'Rye' Bread
This recipe makes a nut bread, very reminiscent of rye bread. It works very well for sandwiches, or as toast.
Ingredients
- 2 single-cake packages or 1 cup Wise Choice Cake-ability Baking Aid
- 2 cups ground pecans
- 1 tablespoon dried onions
- 2 tablespoons poppy seeds
- 2 tablespoons caraway seed
- 2 tablespoons dill seed, crushed
- 1/2 teaspoon salt
- 1 1/4 cups water

2 tablespoons vegetable oil
Directions
Makes one loaf of approximately 24 one-ounce slices.
Preheat oven to 350° F. Line an 8-inch loaf pan with parchment or foil.
1. Combine ground nuts, Wise Choice Cake-ability Baking Aid, dried onions, poppy, caraway, and dill seeds, and salt in a medium mixing bowl. Stir to break up any lumps.
2. In a separate bowl combine water and oil.
3. Add to dry ingredients, gently stirring until combined and thoroughly wet.
4. Immediately pour into prepared pan and microwave and bake for 20-30 minutes, or until center springs back.
NOTE: You can also make this bread in the microwave: Microwave for 7 minutes on HIGH, or until center springs back.
