Low-carb, Low-fat, Low-cholesterol Sabayon

A light and frothy dessert that is the perfect ending to a rich or heavy meal.

 

Ingredients

  • Zest of 1 lime
  • Juice of 1 lime made up to 1/4 cup with bottled lime juice, preferably key lime
  • 3/4 cup water
  • Sweetener equivalent to 1/2 cup sugar r
  • Pinch salt
  • 1 1/2 teaspoons Wise Choice Pudding Mix
  • 1 tablespoon heavy cream

     

Directions

Makes about 3/4 cup - enough to serve 2 people, or 4 if served over berries.

1. In a 2-quart saucepan whisk together lime zest, juice, water, sweetener, salt and Pudding Mix.

2. Whisk over medium high heat until mixture boils and thickens. Continue to whisk for 30 seconds more. Turn off heat and whisk in cream. Sabayon will thicken slightly as it cools.

To serve: Serve warm. Whisk before serving. Serve in a wine glass either alone or over fresh raspberries, blueberries or strawberries.

Note: Try to use a microplane zester for fine zest. The zest tends to be too coarse from a box grater.
