Savory Goat Cheesecake

Not all cheesecakes have to be sweet. This recipe makes a great savory appetizer that can serve a crowd. Serve by the wedge on plates with forks or use it as a spread for crackers or cucumber slices.

 

Ingredients

  • 2/3 cup pine nuts
  • 1/2 cup grated parmesan cheese
  • 8 ounces cream cheese
  • 8 ounces goat cheese
  • 1 cup water
  • 2 teaspoons minced garlic
  • salt and pepper, to taste
  • 1 package Wise Choice Easy Cheesecake Mix

     

Directions

Serves 16.

Preheat oven to 500°F. Grease two 6" pie or cake pans.

1. Make crust by sprinkling base with pine nuts and covering with a thin layer of parmesan cheese. Bake until cheese is melted. If you do it during the preheating of the oven, watch carefully to avoid burning.

2. With mixer on medium-high setting, whip cheeses with water. Add garlic and season to taste. Mix in Wise Choice Easy Cheesecake Mix and immediately pour into pie pan.

4. Place in preheated oven and immediately turn temperature down to 250°F. Bake for 30 minutes or until set in center. Allow to cool 30 minutes in oven with door open and then another 30 minutes on countertop. Refrigerate before serving.

To serve: turn upside down and unmold onto serving plate. Garnish with basil and tomato pesto or fresh basil leaves and sun-dried tomatoes.
