Sugar-free Low-carb Raspberry Sorbet

It is difficult to make a truly low-carb sorbet, as not only must you eliminate the added sugar, but also limit the sugar that comes from the fruit. Howevever, with the help of Wise Choice Frozen Dessert Mix, it is possible to make a delicious sorbet without sugar and where the flavor of the fruit really shines through even when the amount is limited.

Our recipe below is for raspberry sorbet because raspberries are delicious, low-carb, and available frozen year-round, but you can use other fruit purees as long as you keep in mind that other fruits will almost certainly be higher in carbs. (Adjust the amount of sweetener and lemon juice to taste.)

 

Ingredients

  • 3/4 cup lukewarm water
  • 1 package Wise Choice Frozen Dessert Mix
  • Sweetener equivalent to 5 teaspoons sugar
  • 1/2 cup unsweetened raspberry puree
  • 1 teaspoon lemon juice

     

Directions

Makes 8-12 1/2-cup servings.

Make sure that anything that touches the unwhipped mixture, including measuring spoons and cups, is grease-free.

1. Place water in a one-quart glass or metal mixing bowl. Add Wise Choice Frozen Dessert Mix and sweetener. With an electric mixer on LOW, mix until powder is dissolved. Scrape down sides of bowl.

2. Turn electric mixer to HIGH and whip for 2-4 minutes or until foam forms peaks.

3. Continue to mix for 1 more minute until dessert is firm. Add raspberry puree and lemon juice and mix until combined.

3. Add to dry ingredients, whisking gently until just combines.

4. Freeze until firm, and store, covered, in freezer

You may need to adjust the sweetening. It's safer to err on the side of too little sweetening than too much. You can always sprinkle on a little syrup or sweetener if necessary, but too much sweetness tends to detract from the fresh flavor.
