Low-carb Strawberry Dessert
This can be served alone with a dollop of whipped cream. It can also be used as a sauce. The method works for other fruits too.
Ingredients
- 1 pound strawberries, sliced
- 1/2 teaspoon ThickenThin not/Starch thickener
- 1/2 cup water
- Sweetener equivalent to 1 tablespoon sugar
- 1 teaspoon lemon juice

Directions
Makes 4 (dessert-sized) servings.
1. Pour strawberries into a 3-quart saucepan.
2. Whisk ThickenThin not/Starch thickener into water and add to berries. Add sweetener and bring to a boil over medium-high heat, stirring gently.
3. Lower heat, and continue to cook for about 30 seconds or until it thickens slightly.
4. Remove from heat and stir in lemon juice. Cool.
5. To serve: Divide between four glasses or ramekins. Top with whipped cream if desired.
