Low-Carb "Sweet Potato" Casserole

Pumpkin and ThickenThin not/Cereal thickener team up beautifully in the recreation of this sweet-potato holiday dish. Feel free to vary the flavorings to suit your family, but if you want to fool them into thinking that it is real sweet potato, you will need to use strong flavorings.

 

Ingredients

  • 27-ounce can pumpkin
  • 3 tablespoons ThickenThin not/Cereal thickener
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Sweetener equivalent to 2 tablespoons sugar
  • 2 tablespoons lemon extract
  • 2 tablespoons brandy
  • 2 teaspoons lemon juice
  • 2 teaspoons butter flavor
  • 2 large eggs, beaten
  • 1/4 cup mayonnaise

     

Directions

Serves 8.

Preheat oven to 350° F. Coat a 2-quart casserole dish with non-stick spray.

1. Combine all ingredients and pour into casserole.

2. Bake until set and lightly browned - about 30 minutes.
