Lowcarb Tomato Soup

This low-carb, gluten-, starch- and dairy-free soup, tastes very similar to Campbell's Tomato Soup.

 

Ingredients

  • 1 cup water
  • 4 beef bouillon cubes
  • Sweetener equivalent to 4 teaspoons sugar
  • 3 cups tomato juice
  • 4 teaspoons ThickenThin not/Starch thickener
  • 1/4 teaspoon cayenne pepper, or to taste

     

Directions

Serves 4.

1. Place water in saucepan and bring to a boil over medium-high heat.

2. Add bouillon cubes and sweetener and stir until dissolved.

3. Add tomato juice and ThickenThin not/Starch thickener. When soup thickens remove from heat and add cayenne pepper to taste.
