Chocolate Truffles

Creamy and satisfying chocolate candies.

 

Ingredients

  • 1 pound mascarpone, softened
  • 1/4 cup unsweetened cocoa
  • 1/2 cup ThickenThin not/Sugar thickener
  • Sweetener equivalent to 4 teaspoons sugar, or to taste
  • Pinch salt
  • 2 tablespoons vanilla
  • 1 cup minus 2 tablespoons unsalted butter
  • Nuts for coating

     

Directions

Makes about 36 one-inch truffles

1. Using a whisk beat mascarpone until smooth. Sieve in cocoa.

2. Gradually whisk in remaining ingredients.

3. Refrigerate until firm.

4. Shape into truffles. Roll in desired coating.
