Chocolate Truffles
Ingredients
- 1 pound mascarpone, softened
- 1/4 cup unsweetened cocoa
- 1/2 cup ThickenThin not/Sugar thickener
- Sweetener equivalent to 4 teaspoons sugar, or to taste
- Pinch salt
- 2 tablespoons vanilla
- 1 cup minus 2 tablespoons unsalted butter

Directions
Makes about 36 one-inch truffles
1. Using a whisk beat mascarpone until smooth. Sieve in cocoa.
2. Gradually whisk in remaining ingredients.
3. Refrigerate until firm.
4. Shape into truffles. Roll in desired coating.
